The Mother of Dragons Dragon Fruit Smoothie Recipe

MOTHER OF DRAGONS. Sorry, had to.   Couldn’t resist…

First of all, these babies are BEAUTIFUL. So bright and pretty, it’s hard not to feel a child like sense of happy holding one of these. My first time having Dragon Fruit was with my friend Beth. We got Dragon Fruit bowls near her place in Southie and since then I’ve been hooked ! I wanted to recreate that delicious goodness at home. You’ve probably had a bright, fuchsia Dragon Fruit bowl before. Well, I was really confused when I opened up my Dragon Fruit and it was WHITE . What did I do wrong? Is it ripe? ALL THE CONFUSION. Turns out, there are different variations of Dragon Fruit…

Dragon Fruit Fun Facts:

  •  Dragon Fruit is also known by it’s official name, Pitaya

  •  The Dragon Fruit is a climbing cactus

  • There are a few varieties of the Dragon Fruit, some having pink flesh and some having white

  • They are indigenous to Central America but is also grown and exported from several Southeast Asian countries, such as Thailand and Vietnam

Now, onto the recipe! This is super easy to make, you just toss all your ingredients in a blender. It took longer for me to assemble my ingredients than it was to actually make. Dragon Fruit contains a lot of water naturally, so I didn’t find the need to add any additional liquid. This recipe yields 2 1/2 cups, so I saved half of it for an afternoon snack. Top with coconut flakes for some extra fun. I’ll never say no to coconut flakes (or extra fun)…

Side note: I’ve been searching high and low for frozen Dragon Fruit in it’s bright, pink flesh version. If and when I find it, I want to make this recipe into bowl form rather than a smoothie. Dragon Fruit Smoothie Recipe

Ingredients

1 Dragon Fruit

1 Container of Vanilla Skyr (or favorite yogurt)

1 Cup of Blueberries

1/2 Cup of Strawberries

1/2 Banana

1 1/2 TBSP Almond Butter

1 TSP Organic Raw Honey

1 Scoop of Vanilla Protein Powder (Optional)

Instructions

  1. Cut Dragon Fruit in half

  2. Scoop out the Dragon Fruit with a spoon

  3. Combine ingredients into blender

  4. (Optional) Top with coconut flakes

  5. Enjoy!

Notes

Makes 2 1/2 servings! Enjoy half now, split it with a friend, or save the rest for later!
